The history of the dairy “Cugusi” starts in 1962, when Raffaele and Maria Cugusi moved from Sardinia to Tuscany, bringing with them the ancient techniques of cheese making. The first step was the simple processing of the fresh milk for cheese, focusing on a familiar production. The dairy has grown over the years and has expanded its potential when the children of the couple have taken over as managers of the dairy after their parents. Currently, the factory is run by two of the sisters, Giovanna and Silvana and their husbands, but the rest of the family contributes to the company’s well-being in several ways: with agriculture, sheep farming, and with the management of the farmhouses. The dairy is located on the beautiful hills along the route between Montepulciano and Pienza, towns of Italy very well-known for their beauty, on an area of one hundred and ninety hectares of olive groves, vineyards and grazing lands. Since its origin, the dairy has always followed a farm-based production method, respecting the local typicality, and still today the milk of its flock, as well as that of some stables of Pienza and Val d’Orcia, is processed for various types of cheese. From the milking to the sale, the pecorino cheese “Cugusi” is followed with care and diligence in all stages of processing, as regards both the fresh products, and the cheeses aged in different ways, according to the local traditions: in walnut leaves, under the bran, hay and ash.

from March to October: every day, all day long (8:00 a.m.-7:30 p.m.);
from November to March: every day, in the morning (8:00 a.m.-1:00 p.m.) and in the afternoon (3:00 p.m.-7:00 p.m.)
